However, my pal who runs a restaurant gets it for all of their spicy Mayo additions. Adding to the conversation, I also add some msg or salt to my finished Mayo products. A little soy mixed with sriracha.

Spicy mayo will vary. Easiest is kewpie mayo and sriracha but there are many many other options. Best bet would be to ask the restaurant directly - if they won’t give the full recipe ask at least if it’s sriracha or something else and you can figure out the mayo separately.

You blend the onion with everything except the mayo, then mix the red mixture into the mayo. You can just buy spicy mayo that's in any grocery store but this recipe is way better.

Yum Yum Sauce (also called Japanese White Sauce) only has a mayo base and is not spicy. Spicy Mayo is a very very wide range of mayo mixed with various spice mixes/pastes... Commonly nowadays you'll find it mixed with Gochujang (a Korean Pepper Paste).
