The "Yield Equivalencies" chart I had also gave banana weight - 2-pounds (3 medium bananas) = 2 c. mashed and 2-1/2 c. sliced. Then I went to the link ovenbird shared (Gourmet Slueth) and converted the size (length) of the bananas to mashed bananas and it said 1.35 cups - which was almost exactly what they measured after being mashed.

Many years ago, I grew bananas in our garden. One of the things I learned is that if you pick them too soon, they never ripen - most of the time. Usually, the whole bunch will go ripe at the same time and then you're going house to house, trying to unload 60+ bananas before they rot.

OVERRIPE bananas have a pH of 6.5 to 7.0 (low-acid numbers). So if you have REALLY overripe bananas, make sure there is also some baking powder in the recipe to assure leavening; or another acid ingredient in the recipe to activate the baking soda (if it's the only leavening agent). Overripe bananas may not be acid enough to activate the soda.

Well, I lived in SC most of my life and I got bananas from my plants by digging them in the winter, wrapping them in newspaper, and tossing them under the house in the crawl space where the heater ductwork kept them warm, then replanting them in the spring. It sometimes took 3 years to get fruit, but I did.
